高效复合酶菌剂的应用研究

摘要 将高效复合酶菌剂应用于浓香型白酒传统发酵工艺、翻沙工艺、双轮底工艺,考查该复合酶菌剂在实际生产中的作用。结果表明,高效复合酶菌剂应用在常规粮糟发酵中,有一定的效果,在翻沙生产中可以提高优级品率10%,在双轮底生产中可提高优级品率9%;所有实验窖酒的感官品评均无异味,证明高效复合酶菌剂不会带入不良的风味,对酒体无不良的影响。 The strong-effect composite preparation of enzyme and microorganisms was used in strong-flavor Chinese spirits production process of traditional fermentation, second addition fermentation ,double bottom fermentation, to examine the effect of the composite preparation in the actural production. Experimental results on three different production processes show that:the composite preparation in traditional fermentation pro- cess have a certain effect; in second addition fermentation ,the top-grade product rate can be improved byl0 %;in double bottom fermentation the rate can be improved by 9 %. While the sensory trait of all the spirits produed in experimental cellar has no peculiar smell, proved that the composite preparation has no bad influence on the spirits.
