Determination of Blueberry Anthocyanins through pH Differential Method

摘要 为更准确地测定蓝莓中的花色苷含量,采用酸性乙醇对蓝莓中色素进行提取,经紫外可见光谱及化学分析法确定为花色苷,并采用pH示差法对蓝莓花色苷的含量进行定量分析。结果表明:蓝莓中花色苷含量为313.24mg.100g-1,测定结果的相对标准偏差为1.39%。该方法很好地消除溶液中杂质对测定结果的影响,方法可靠。 For determinieg the contents of blueberry anthocyanins more exactly, the blueberry pigments were extracted by acidic alcohol and were identified anthocyanins by UV-VIS spectra and chemical methods. The blueberry anthocyanins were quantitatively analyzed through pH differential method. The results indicated that the content of blueberry anthocyanins was 313.24mg.100g-1 and the relative standard deviation was 1.39%. The influence on measuring results by impurity in the solution was eliminated by pH differential method.
