中职烹饪专业双语教学改革初探——以南京旅游营养中等专业学校为例 被引量:5

摘要 中职学校烹饪专业迫切需要在教好学生专业知识和技能的同时加强英语教学,寻求适合学生学习的双语教学模式,以更好地满足国内外市场的需求。中职烹饪专业双语课的目标是使学生在专业操作能力和烹饪英语口语水平方面获得全面发展。烹饪专业双语教学面临的困难有三:一是教师素质有待提高,二是教材严重匮乏,三是学生的英语水平参差不齐。提高中职烹饪专业双语教学水平的对策有四:一是大力加强师资队伍建设;二要创新双语教学模式,设置合理的课程体系;三应加强双语教材建设;四是注重教学方法创新。 Secondary vocational schools are in need of cultivating knowledgeable and skillful cuisine talents with high-quality English skills to meet the demand of national and international markets. Thus, a bilingual education mode that is adaptable for the students is necessary. The objective of bilingual teaching in cuisine specialty in secondary vocational schools is for the all-round development of students' professional operation skills and oral English skills. Currently there are mainly three problems: relatively low qualities of teachers, critical shortage of teaching materials and various qualities of students' English skills. Four countermeasures are proposed in this essay: strengthening teaching faculty construction; innovating bilingual teaching mode and setting up reasonable curriculum system; promoting bilingual teaching material construction; and innovating teaching methods.
