摘要 食用菌深层发酵技术因其生产周期短、产量大、质量高、经济效益突出等优势而被广泛研究和应用,在液体菌种制备、医药及保健、食品行业、线虫防治以及抑菌防腐等领域具有广泛用途。对食用菌深层发酵技术的应用领域进行了综述,随着现代科学技术的发展,食用菌发酵技术将与蕈菌学、微生物学、发酵工艺学和工程学各学科相互交叉和渗透,特别是发酵产物分离技术的发展,会使食用菌液体发酵技术应用更广泛、前景更广阔。 Submerged fermentation technology of edible fungus is widely studied and applied because of its salient advantages of short production cycle,large output,high quality and cost-effective.It could be used in wide range of the liquid strains preparation of edible fungus,medicine and health care,food industry,nematode control and antibacterial antiseptic.In this paper submerged fermentation technology of edible fungus and its application were reviewed.Along with the development of modern science and technology,fermentation technology of edible fungus is interdisciplinary with and penetrated into science of mushrooms and fungus,microbiology,fermentation technology and engineering.Especially promoted by the growth of separation technology of fermented product,the application of edible fungus liquid fermentation technology will develop more extensively and more widely.
