摘要
芥菜籽含有丰富的营养物质,是重要的调味品原料,在我国大部分芥菜籽未得到充分合理的利用。通过介绍芥菜籽的功能成分、深加工技术以及在食品中的应用,以促进芥菜籽的综合利用和新产品的开发,进一步提高产品的附加值。
Mustard seed is an important spice raw material and is rich in nutrients. While most of mustard seed were not fully rational used in our country. In order to promote the comprehensive utilization of mustard seed and new product development, the functional components of mustard seed, deep-processing technology and application in food science were described, thereby it will further enhance the added value of the products.
