变性淀粉在新兴的食品工业中被广泛使用,其发挥的作用往往优于普通原淀粉,且比原淀粉更加节约生产成本,还可以改善食品质构特性。本文就变性淀粉的基本性质及在食品工业中的应用情况进行了深入的探讨,并对其发展趋势作出科学的分析。
Modified starch is widely used in emerging food industry; its rote is often superior to ordinary raw starch, and compared with the original starch, it saves the pi'oduction cost, also can improve food quality and structure features. This paper studies the basic properties of modified starch and its application in food industry, carries on the thorough discussion and analysis of the scientific development trend.
