摘要
某工厂发现某批次菊花茶产品部分变质,变质产品表现为pH值降低,有可见沉淀并带微臭。通过对变质菊花茶产品进行微生物分离、生理生化鉴定及反接种实验,确定此批次菊花茶产品受嗜水气单胞菌污染;查阅菊花茶生产记录及对生产过程进行分析,确定其污染环节为冷却阶段,污染源为冷却水。实际生产中,用次氯酸钠溶液加强对冷却水杀菌,解决了冷却水污染问题,进而避免再次出现类似质量问题。
The batch of chrysanthemum tea drink was deteriorated with pH decrease, visible deposition and slight odor. The microorganism was isolat- ed from contaminated sample and primarily identified as Aeromonas hydrophila by physiological and biochemical identification and back inoculation experiments. In this case, the cooling water was probably pollutant source because Aeromonas hydrophila was the main putrefactive microorganism and its unique strain was just the same as those of water. The records and analysis of chrysanthemum tea production supported this deduction. In prac- tice, the quality problem was solved by disinfecting the cooling water with sodium hypochlorite solution.
