常温下壳聚糖处理对冬枣采后生理及保鲜效果的影响 被引量:3

摘要 以河北产冬枣为试材,研究了不同浓度壳聚糖涂膜处理对常温下(20±1)℃,相对湿度60%~80%的冬枣贮藏品质和保鲜效果的影响。结果表明:与CK组相比,壳聚糖处理能显著抑制果实烂果率和失重率的变化(P<0.01),延缓果实硬度和维生素C含量的下降(P<0.05),抑制果实呼吸速率的变化(P<0.05)。其中,以2.0g/100mL壳聚糖处理的冬枣贮藏品质最优,贮藏25d,烂果率仅为43.3%,失重率和呼吸速率分别为7.36%和98.3mg(CO2)·g-1·h-1,果实硬度和维生素C含量分别为9.23kg/cm2和2.42mg/g。 Taking winter jujube as material,the effects of different concentrations of chitosan treatment at room temperature(20±1) ℃,relative humidity 60%~80% on the storage quality and fresh-keeping effect were studied.The results showed that compared with CK group,the change of chitosan treatment could inhibit the change of fruit rot rate and weight loss rate(P0.01),delay decrease of fruit firmness and VC content(P0.05),delay change of respiration rate(P0.05).Among them,the storage quality of winter jujube was optimal with 2.0g/100mL chitosan treatment,25 days of storage,rotten fruit rate was only 43.3%,weight loss rate and respiration rate were 7.36%and 98.3mg(CO 2)·g-1·h-1,fruit firmness and VC content were 9.23kg/cm 2 and 2.42mg/g.
