摘要 该文报道研究一种既提高发芽糙米GABA富集量又减少重金属含量新方法。在糙米发芽前,采用EDTA–CaNa2溶液浸泡,当EDTA–CaNa2浓度为80μg/mL(Ca2+浓度约0.2 mmol/L)、浸泡时间为10.5 h时,可使发芽糙米GABA富集量提高42.4%,达到63.36 mg/100g;同时,EDTA–CaNa2溶液浸泡可促进糙米中镉、铅元素迁移溶出。所以,EDTA–CaNa2溶液浸泡不仅提高发芽糙米GABA富集量,且提高发芽糙米产品安全性,为发芽糙米产品加工提供新思路。 The present paper studies a new method to improve GABA accumulation as well as to reduce heavy metal content in germinated brown rice: using EDTA-CaNa2 solution soak the brown rice before germination. When the concentration of EDTA-CaNa2 is 80 μg/mL ( concentration of Ca2+ is about 0.2 mmol/L ), and the soaking time is 10.5 h, the content of GABA in germinated brown rice increased by 42.4%, up to 63.36 mg/100g. And at the same time, EDTA-CaNa2 solution soaking can promote the remove of Cd, Pb from brown rice, but have little effect on the content of Zn. Thus, EDTA-CaNa2 not only improves enrichment of GABA in the germinated brown rice, and improves the safety of germinated brown rice products, provides a new idea for processing of germinated brown rice.
