双层膜酵母菌微胶囊的制备及其稳定性研究 被引量:1

摘要 研究结合2种应用广泛且成本相对低廉的微胶囊化工艺,熔化分散冷凝法和喷雾干燥法,对筛选具有优良益生功效的酵母菌进行微胶囊化,并对最终微胶囊产品的稳定性进行测定,结果表明双膜微胶囊化,工艺简单,比较有效,包埋率可达93.73%,活菌数达97亿CFU/g。
