摘要
以新鲜草莓为实验材料,研究壳聚糖季铵盐涂膜对其保鲜效应。测定了失重率、可溶性固形物含量等果实理化指标。结果表明:草莓在常温(26~30℃)下贮藏,当壳聚糖季铵盐涂膜液浓度为2%,pH为5.0,浸泡时间为60 s,保鲜效果达到最好,草莓可稳定保存6 d,此时的失重率为3.0%,可溶性固形物的含量为5.2%。
Effect of chitosan coating of quaternary ammonium on strawberry preserving was studied. Weight loss rate and the soluble solids content of strawberry were measured. The results indicated that at the condition of room temperature (26 - 30℃) storage, the preserving effect achieved optimum results when the content of chitosan coating of quaternary ammonium salt is 2%, PH is 5.0 and the soaking time is 60 seconds. Strawberry could be stably stored for 6 days, and weight loss rate was 3.0% and the soluble solids content was 5.2%.
