摘要
通过对使用SPRO1010型氮氧置换仪前后的葡萄酒在均质、下胶、冷冻、灌装等后处理过程中,其溶解氧、色度、色调、游离二氧化硫、总二氧化硫的对比跟踪检测,研究了溶解氧在各个工序处理中的变化规律,同时试验检测数据也为葡萄酒工业化生产中实现防氧隔氧的可控管理提供了重要参考。
SPR01010 nitrogen-oxygen exchange apparatus was used in post-processing of grape wine including homogenizing, fining, freezing, and filling etc. Tracing measurement of dissolved oxygen, colority, tone, free sulfur dioxide, and total sulfur dioxide was performed to investigate the change rules of dissolved oxygen in each processing procedure. Meanwhile, the measured data in the experiment could provide useful refer- ence for the control management of oxygen in grape wine production. (Tran. by YUE Yang) :
