摘要 为了研究微波功率、作用时间、料液比、乙醇体积分数4个主要因素对黑米黑色素提取率的影响,对4个影响因素选取3个不同水平,进行L9(34)正交试验,相同条件下试验进行3次,吸光度取平均值,建立多元回归统计模型。结果表明,微波功率与黑米黑色素提取率正相关,料液比、乙醇体积分数与黑米黑色素提取率负相关,作用时间对色素提取率影响不显著,被剔除出统计模型。微波功率、料液比、乙醇体积分数是影响黑米黑色素提取率的重要因素。 To study the effects of microwave power, microwave time, liquid to material ratio, and alcohol volume fraction on extraction yield of black pigment from black flee, L9(34) orthogonal experiment was conducted by using the absorption value of extract as index. And multiple regression statistics model was established based on the test. The results showed that there was positive correlation between microwave power and yield of black pigment; while liquid to solid ratio and alcohol volume fraction ratio was negatively correlated with yield of black pigment. Microwave time had little effects on yield of black pig- ment. It was concluded that microwave power, liquid to material ratio and alcohol volume fraction had important effects on the extraction yield of black pigment from black rice.
