摘要
研究热泵干燥对草菇干燥速率及硬度的影响。结果表明,前4 h水分含量下降明显,随着温度的升高,草菇水分含量下降的速度加快,水分含量趋于稳定的时间缩短。切片草菇水分含量下降的速度最快,其次是切半草菇,完整草菇最慢。在同一干燥条件下,完整的草菇干硬度最大,其次是切半草菇和切片草菇干。随着温度的升高,草菇干的硬度减小。
Volvariella volvacea was treated as vertical slices and vertical half, and dried at three different tempreatures in heat pump dryer. Meanwhile, the hardness of dried Volvariella volvacea was measured. The results showed that the moisture content before 4 h were decreased obviously. With the tempreature increased, the decrease ratio of the moisture content was increased and the drying time until the weight of Volvariella volvacea into the constant value was decreased. Moreover, the decreased ratio of the water content for the vertical sliced VolvarieUa volvacea was the most fast, which was followed by the vertical half Volvariel- la volvacea and whole Volvariella volvacea. At the same drying condition, the hardness of whole Volvariella volvacea was the big- gest, which was followed by sliced Volvariella volvacea and vertical half Volvariella volvacea. With the temprature increased, the hardness was decreased.
