抗性淀粉对抗糖尿病的可能作用机制 被引量:5

摘要 抗性淀粉是一种不可溶的发酵性纤维,属于益生元。根据淀粉的来源和人体试验的结果,抗性淀粉主要可分为4类:(1)物理包埋淀粉(RS1),主要存在于未研磨或部分研磨的谷粒、豆粒及种子中,淀粉酶难以接触;(2)抗性淀粉颗粒(RS2),要存在于生的香蕉、马铃薯以及豌豆等食物中,其特殊结构使抗酶解性很强,几乎不被消化;(3)回生淀粉(RS3),是糊化加工后使淀粉的结构发生变化而回生的直链淀粉和少量变性的支链淀粉分子的总称,
