摘要
目的:了解目前淀粉及淀粉制品中铝的残留量水平,为今后的淀粉制品风险评价提供依据。方法:对部分市场上销售的淀粉、粉丝、粉皮类产品进行抽样检测,采用等离子体发射光谱仪(ICP-AES)法对其中的铝元素进行分析测试,并进行风险评估。结果:目前淀粉中铝残留量在20mg/kg以下,淀粉制品中粉丝中铝的残留量超标量为40%,粉皮类淀粉制品超标量为75%。结论:目前淀粉制品中铝残留量仍然较高,迫切需要改变传统工艺,减少明矾的使用量,并且建立相关标准,从管理上降低铝残留量。
Objective: The pollution level of aluminum in starch and starch products was investigated to provide the basis for supervisory and monitoring work in the future. Method: Aluminum element in starch and starch products was analyzed by inductively coupledplasma emission spectrometer technique (ICP- AES) and the risk was evaluated. Result: Among 40 samples deliveried, the aluminum content in starch was below 20 mg/kg. The residues of aluminum beyond standard value is 40% in fans and in bean starch sheet the value is 75%. Conclusion: It was necessary to enhance the food safety control for monitoring the aluminum pollution in starch product.
