摘要
采用Peleg方程,探讨了薏米和糯米在不同温度(30-60℃)和不同时间间隔下(10~1200Min)的吸水动力学性质。研究结果表明,利用Peleg方程能够很好地模拟薏米和糯米在60℃以下的水分吸收过程,回归系数R^2〉0.999,水分吸收的测量值与预测值没有显著差异(P〈0.05)。因此可运用吸水动力学方程对薏米和糯米浸泡过程中的近似水分含量进行预测。
The Peleg model was investigated to predict water absorption of Coix Seed and glutinous rice during soaking between temperature (T)of 30-60℃ for 10~200min.The results revealed that Peleg equation fit the measured water absorption data bellow 60℃ well, the coefficients of regressions R2〉0.999 and there was no significant difference between the measured and predict water content(p〈0.05).So the equation can be used to calculate the water content of Coix Seed and glutinous rice during soaking process.
