四种石磺营养成分分析及价值评价

Analysis and evaluation of nutritive composition of four species of Onchidiidae

2012年4月至5月,采集里氏拟石磺(Paraoncidium reevesii)、平疣桑椹石磺(Platevindex mortoni)和紫色疣石磺(Peronia verruculata)样品(广东湛江)以及瘤背石磺(Onchidium struma)样品(上海崇明),经活体解剖取四种石磺肌肉组织,对其进行水分、灰分、粗脂肪、粗蛋白、总糖、氨基酸、矿质元素的测定。结果表明:四种石磺均是高蛋白低脂肪、富含水分及矿物质元素的贝类,且瘤背石磺的总糖含量显著高于另外三种石磺。四种石磺肌肉组织蛋白质含量高,蛋白质氨基酸组成全面、呈味氨基酸含量高、必需氨基酸含量符合FAO/WHO理想模式,必需氨基酸组成比例适宜,属于优质蛋白质。四种石磺肌肉组织中矿质元素的含量较丰富,尤其是Ca、Mg含量特别高。说明四种石磺具有较高的营养价值,可作为特色海鲜或高档滋补品。

In this paper, nutrients of muscular index, moisture, ash, crude protein, crude lipid, total sugar, amino acids, mineral contents were determined in four species of Onchidiidae including Paraoncidium reevesfi, Platevindex mortoni, Peronia verruculata（ Zhangjiang, Guangdong ） and Onchidium struma（ Chongming, Shanghai ）. The results showed that：general nutritional composition exist significant difference, but four species of Qnchidiidae were all high in protein,low in fat,rich in moisture and mineral elements.Mineral elements content in muscle tissue of four species of Onchidiidae were very rich,especially the content of Ca, Mg were particularly high.Four species of Onchidiidae had high protein content in muscle tissue, protein amino acid composition comprehensive, high levels of flavor amino acids,essential amino acid content in line with the FAO/WHO ideal mode,the proportion of essential amino acid composition was good, and abundant mineral elements. Four species of Onchidiidae had a high nutritional value,and they could be as specialty seafood or upscale tonic.
