摘要
影响山羊肉质差异的因素有很多,包括品种、年龄、性别等因素。在条件相同的情况下,羊的品种及功能基因成为影响肉质的决定性因素。综述了影响山羊肉质差异的候选基因的研究进展。
There is many factors influencing the difference of goat meat including variety, age and sex. Under the same conditions, the varieties and functional gene of goats are the most important factors influencing the meat. The research progress of candidate gene was reviewed.
