摘要
以贵妃鸡为试验素材,在常规饲养条件下饲养至13周龄,测定胸部肌肉嫩度、水分、粗蛋白、粗脂肪及氨基酸含量。结果显示:贵妃鸡嫩度平均为1.490,水分、粗蛋白、粗脂肪和粗灰分的含量分别为73.357%、23.132%、1.466%和1.788%。贵妃鸡胸肌氨基酸含量丰富,共检测到16种氨基酸,其中7种为人体必需氨基酸,占氨基酸总量的39.59%。
The royal chicken was used as animal model. All chickens were fed under the same raising condition for 13 weeks. The tenderness, water content, crude protein, crude fat, crude ash and amino acids of the breast muscle 'were determinated. The result showed that the average tenderness was 1. 490. The content of water, crude protein, crude fat and crude ash was 73. 357%, 23. 132%, t. 466% and 1. 788% respectively. The breast muscle of the royal chicken had rich amino acids. There were 16 kinds of amino acid ,in which 7 types were essential to man. And the 7 kinds of the essential amino acids were 39.59% of the total amino acid.
