四种储藏方式对东北大豆品质影响的研究 被引量:3

摘要 通过对华北4个粮库8个仓储藏的东北大豆的蛋白质溶解比率、脂肪酸值、发芽率和孢子计数进行检测,寻找敏感指标。结果显示蛋白质溶解比率、发芽率和孢子计数能较科学反映大豆储藏品质的好坏,低温低湿有利于保存大豆的品质。 The influencing factors and sensitive index for determinant of the quality of soybean were studied by detecting the moisture content, protein content, protein solubility ratio, fat acid value, germination rate and spore counts of domestic soybean in four storage depots in North China. The results showed that the protein solubility ratio, germination rate and spore counts could reflect scientifically the storage quality of soybean, and low temperature and humidity can help to keep the soybean with good quality.
