豆浆在凝固剂作用下的凝结特性

摘要 针对传统的豆浆凝结特性分析方法容易对豆浆胶体产生破坏且不具有实时性等问题,利用纹理分析法对豆浆凝结特性进行分析和计算,并用Matlab对图像数据进行仿真分析。通过对像素点的卷积运算得出图像的梯度值,最终提取图像的特征值。实验结果表明,纹理变化曲线刚开始,梯度值逐渐减小,随着蛋白质网络的形成,豆浆凝结逐渐显现,梯度值逐渐增大,斜率最大时溶液呈中性。之后蛋白凝结速率降低,但梯度值继续上升。由灰度共生矩阵提取的梯度曲线完全反映大豆蛋白的凝结过程。该方法可方便、快捷地对豆浆凝结特性进行分析,价格低廉,实用性强。 The traditional soya-bean milk coagulation characteristics analysis method is not real-time, and may lead to damage. This paper presents the use of texture analysis for the setting character of soya-bean milk, and applies Matlab for data simulation. By the convolution operation of the pixel values, the gradient of the image is obtained, finally, the characteristic value of the image is extracted. The experimental results showed that the gradient of texture curve is gradually reduced at the beginning. By the formulation of protein, the condensation of soya-bean milk then appears gradually, the value of gradient increases. When the maximal slope appears, the solution is neutral. The protein coagulation then reduces, but the gradient value continues to increase. Thus, the gradient curve extracted from GLCM completely reflects the condensation process of say protein. The method can be used to analyze the characteristics of soya-bean milk conveniently, and it is practical with low price.
