水溶性纤维素在乳品中的应用及检测方法建立 被引量:1

摘要 在乳制品中添加10 g/L^30 g/L低能量、无糖的特殊碳水化合物-水溶性纤维素,部分地替代糖和脂肪,满足人体对膳食纤维的需求;采用高效液相色谱示差折光检测,以水作流动相,进样量20μL,在流速0.5 mL/min下,直接测定乳制品中的可溶性膳食纤维含量。结果表明:6次平行实验的精密度和稳定性相对标准偏差分别为1.3%和0.74%,回收率在95%~106.3%之间。该方法简单、准确、快捷,适合于乳制品中水溶性膳食纤维含量的测定。 In dairy products added 10 g/L-30 g/L low energy and the sugar-free of special carbohydrates, water-soluble cellulose. It can part to alternative sugar and fat, meet the needs of the human body to dietary fiber. Using high performance liquid chromatography with refractive index detection, with water as the mobile phase, into sample volume 20 μL, under the velocity 0.5mL/min, directly determination of the content of soluble dietary fiber in dairy products. Results show that the 6 parallel experimental precision and stability of relative standard deviation 1.3 % and 0.74 %, the recovery rate in 95 %-106.3 %. The method is simple, accurate, fast, suitable for the determination of the content of water-soluble dietary fiber in dairy products.
