摘要
以国家膳食营养素检测标准为依据,采用国家标准规定的相关方法,对三籽两型豆Amphicarpaea edgeworthii Benth.进行了全成分分析检测。结果显示,蛋白质含量达21.9 g/100 g,脂肪含量1.22%,碳水化合物含量65.0%,膳食纤维含量18.7%,V B1含量0.026 mg/g,V B2含量0.074 mg/g,V B6含量0.225 mg/g,并含有Zn、Fe、Mg、K、Ca等多种矿质元素。证明三籽两型豆具有较高的食用价值和医药保健价值,值得推广种植、开发利用。
According to the National Dietary and Nutrient Standards, the entire components of A mphicarpaea edgeworthii Benth. were analyzed using the methods of national standards rules. The results showed that the protein content reached to 21.9 g/100 g, the fat 1.22 %, the carbohydrates 65.0 % ,the dietary fiber 18.7 %, Vs, 0.026 mg/g, VB1 0.074 mg/g, VB, 0.225 mg/g. And the plant contains mineral elements such as Zn,Fe,Mg,K, Ca. In conclusion, the bean from A.edgeworthii Benth.has potential value of diery and healthy, worth to cultivate and popularize.
