摘要 食品保藏过程中腐败菌及致病菌的控制一直是困扰全球的问题。为了解决这个问题,各种新方法新技术不断出现。Nisin是乳酸链球菌产生的一种对革兰氏阳性菌具有优良抗菌活性的细菌素,目前已作为食品防腐剂在世界范围大量使用。本文综述了Nisin在食品保藏上的应用及其存在问题和展望。 The control of spoilage bacteria and pathogens has been an important issue during food preservation, in order to solve this issue various new methods and techniques are emerging in recent years. Nisin is a bacteriocin produced by lactic streptococci with excellent antibacterial activity to G + has been widely used in the world. Application of Nisin were reviewed with the disccusion on problems and prospects in this paper.
