摘要
采用胃肠消化酶对麦糟提取蛋白进行胃肠消化模拟实验,研究发现其胃蛋白酶水解液、胰蛋白酶和胰凝乳蛋白酶复合酶水解液以及胰酶水解液均具有较强的抗氧化活性。其中,胰酶水解液的总还原能力、DPPH·清除率和脂质过氧化抑制率最高,分别为2.33、39.7%、30.1%;胰蛋白酶和胰凝乳蛋白酶复合酶水解液的超氧阴离子清除率、羟自由基清除率最高,分别为42.0%、53.0%。研究结果表明麦糟蛋白的胃肠酶水解液适合用于抗氧化肽的制备。
Through the use of gastrointestinal digestive enzymes to simulate gastrointestinal digestion of pro- teins extracted from spent grains, the result indicated that peptic hydrolysate of proteins from spent grains and their subsequent α-chymotrypsin-tryptichydrolysate and pancreatic hydrolysate all showed relatively strong an-tioxidant activities. The total reducing capacity, DPPH radical scavenging capacity and the inhibition of lipid peroxidation of pancreatic were the strongest, and they were 2.33, 39.7% and 30. 1%, respectively. The su-peroxide anion radical scavenging capacity and the hydroxyl radical scavenging capacity of their subsequent α- chymotrypsin-tryptichydrolysate were the strongest, and they were 42.0% and 53.0%, respectively. The re-sults demonstrate that the gastrointestinal hydrolysates of spent grain proteins are suitable to be used in the preparation of antioxidant peptides.
