摘要
目的掌握海安县学校食堂餐饮具消毒工作动态,了解全县学校食堂餐饮具消毒合格情况,为制定学校食品安全卫生监督工作重点提供依据。方法搜集并整理2009—2012年度海安县学校食堂餐饮具监督监测抽检相关资料,进行统计学分析。结果 2009—2012年度该县共抽检学校食堂餐饮具684份,合格628份,平均合格率为91.81%;其中2009年最低,为86.39%;2012年最高,为97.55%。学校食堂量化等级、学校类型、消毒方法是影响餐饮具消毒合格率的主要因素。结论海安县学校食堂餐饮具消毒整体状况好于社会餐饮业且呈逐年上升趋势。今后在学校食品安全卫生监督管理工作中,应加大对小学、初中以及C级食堂的监督监测力度,强化餐饮具消毒人员培训,推广湿热(蒸气、煮沸)消毒、热风循环消毒柜和洗碗机的普及使用,提升全县学校食堂餐饮具消毒整体水平。
[ Objective] To understand the situation of tableware disinfection in school canteens of Haian County, know the qualified rate of tableware disinfection in school canteens, and provide a basis for formulating the key points of food safety and health supervision in schools. [ Methods] The related monitoring data of tableware disinfection in school canteens of Haian County from 2009-2012 were collected and analyzed statistically. [ Results ] A total of 684 tableware samples in school canteens were tested from 2009-2012, and 628 were qualified with the average qualified rate of 91.81%. The lowest rate was 86.39% in 2009, while the highest rate was 97.55% in 2012. Moreover, the main factors that influenced the qualified rates of tableware disinfection included the quantification level of school canteen, type of school, and the disinfection method. [ Conclusion ] The situation of tableware disinfection in school canteens is generally superior to catering trade in Haian County, meanwhile it is increasing year by year. In the future, it is neces- sary to strengthen the supervision and monitoring in primary schools, junior schools and level-C canteens, improve the personnel training of tableware disinfection, and popularize the use of moist heat sterilization, hot air circulating disinfector and dish-washing machine, to elevate the level of tableware disinfection in school canteens.
