白藜芦醇是一种植物抗毒素。该文主要介绍了几种能够产生工业价值且无毒无害符合食品安全的白藜芦醇提取方法:乙醇水溶液溶剂法、酶化学法和生物发酵法,从防癌、抗肿瘤、保护心血管、抗衰老和美容健体4个方向挖掘我国白藜芦醇的利用现状,阐述我国白藜芦醇生物功效的研究进展,为开发具有药用、保健功效的白藜芦醇产品提供依据。

Resveratrol is a plant antitoxin. Several safety methods for extracting resveratrol were introduced, including ethanol-water solution, enzyme method and biological fermentation method. The utilization status of resveratrol in China was studied from four aspects of cancer pre-vention, tumor suppression, cardiovascular protection and anti-aging. The research progress of biological value was elaborated, which will pro-vide basis for producing resveratrol products with health function.
