摘要
论述了菊粉的主要生理功能及其提取方法,介绍了近年来菊粉用于生产果糖、低聚果糖的研究和在食品工业中的应用及开发前景。
:The main physiology functions of inulin and the method of extraction were presented.Productions of fructose and oligo-fructose made by inulin was studied and the applications and development prospected of it in food industry were also introduced.
