摘要
实验研究了不同预处理方法对冬瓜热风干特性的影响,并绘制了含水率曲线及干燥速率曲线。结果表明:热风风速对冬瓜干燥特性影响较大,温度影响相对较小,渗透处理后干品从色泽上要比漂烫和未渗透的产品相对好一些。该研究可为冬瓜热风干燥工艺的研究与优化提供一定的理论依据。
This article after the test and research the different pretreatment methods white gourd hot air drying characteristics of the influence,and to draw the curve of moisture content and drying rate curve.The results show that: Hot wind drying characteristics of wax gourd melon influence is bigger,temperature influence is relatively minor,osmotic treatment after from the various color than not penetration and blanching products relative better.This study can be as white gourd hot air drying process research and optimization to provide certain theory basis.
