Analysis on surveillance results of food-borne pathogens in Kaifeng

摘要 目的了解开封市餐饮食品的安全状况,及早发现潜在的食品安全隐患,为开封市食品安全现状分析和监管提供准确信息。方法按照国家标准和2011年《中国食源性致病菌监测手册》对从开封市部分餐馆采集的5类共59份食品进行了4种食源性致病菌的监测。结果分离出致病菌7株,其中沙门氏菌4株、金黄色葡萄球菌3株,总检出率为11.86%。结论开封市餐饮食品存在一定程度的食源性致病菌污染,该现象应引起有关部门重视,加强监督监测,控制污染,以保护就餐者身体健康不受损害。 Objective To learn about the security status of food-borne pathogens of the main food in catering industry in Kaifeng,and early find out the potential safety hazard,so as to provide accurate information for analysis and surveillance of food safety in Kaifeng.Methods According to the national standard and " the food-borne pathogen detection manual",a total of 5 categories and 59 cases of food collected from part of the Kaifeng restaurants were conducted with determination for the surveillance of 4 categories of food-borne pathogens bacteria.Results Totally 7 strains of pathogenic bacteria were isolated,including 4 strains of Salmonella and 3 strains of Staphylococcus aureus,and the total detection rate was 11.86%.Conclusions A certain degree of food-borne pathogens contamination exists in the main foods of catering industry,which should attract the attention of relevant department.The supervision and surveillance should be strengthened and contamination should be controlled,so as to ensure the health of consumers.
