摘要 应用酸消化处理系对三种肉类食品进行消解,采用电感耦合等离子体质谱法分析了猪肉、牛肉和羊肉肌肉组织中微量元素的含量。采用八极杆碰撞/反应池技术,通过选择不同的分析检测模式,在确保方法灵敏度的情况下,有效地减少了多原子分子的重叠形成的质谱干扰,各待测元素的检出限在0.005~0.192μg/L之间。研究结果表明,猪肉、牛肉和羊肉前腿肌肉中含有丰富的ca、Fe、Zn、Mn、Cu、Se和Mo等微量元素,三种肉类食品中微量元素含量丰富且差别较大,重金属的含量较低。 The use of acid sample digestion system to digest, and trace elements amounts of Na, Mg, K, Ca, Mn, Fe, Ni,Cu,Zn,As,Se, Mo,Cd and Pb in muscle tissues of pork, beef and lamp were determined by inductively coupled plasma mass spectrometry. With octopole reaction system,different collision reaction modes were selected,and the sensitivity of the method was ensured. Consequently,the spectral interferences caused by the overlaps of polyatomic molecules were effectively decreased. Detection limits of these trace elements were in the range of 0.005-0.192μg/L. Results showed that three kinds of boneless picnic shoulder contained many wholesome elements,such as Ca,Fe,Zn, Mn,Cu,Se and Mo,but there was great difference between different species. The muscle tissues of different kinds of meats contain little heavy metals.
