摘要
研究高压脉冲电场(PEF)对牛初乳粉的杀菌效果和对牛初乳粉中IgG含量和活性的影响。结果表明:电场强度和处理时间是影响PEF杀菌效果的主要因素,随着电场强度和处理时间的增加,杀菌效果越明显。在20,30,40,50kV/cm不同的电场强度下,当处理时间达到50 s时,牛初乳粉中的大肠杆菌菌落数分别下降了1.85,2.40,2.66,3.31个对数值(lg值)。霉菌孢子对PEF较不敏感,酵母菌和霉菌比大肠杆菌更难杀灭,PEF处理对牛初乳粉中的IgG含量和活性基本没有影响。
Effect of pulsed electric fields (PEF) on the sterilization of bovine colostrum powder and content, activity of IgG in bovine colostrum powder was investigated. Results showed that electric field intensity and treatment time were main influence factors. When the electric field strength and processing time increased, the sterilization result was more significant. About 1.85, 2.40, 2.66 and 3.31 lg reduction of E.coli were achieved at 20, 30, 40 and 50 kV/cm for 50 s. Mold spores were more insensitive to the PEF, yeast and moulds were more difficult to kill than E.coli. No significant effect of PEF treatment on content, activity of lgG in bovine colostrum powder was observed.
