介绍食品中常见抗氧化剂的种类,分析了食品抗氧化剂的化学特性、在食品中的应用情况及其危害。对食品抗氧化剂的检测技术及研究进展进行了综述。
The familiar kinds of antioxidants in food were expounded. The chemical properties, application situations and harmfulness of antioxidants in food were analyzed. The detecting technique and research progress of antioxidants were summarized.
