摘要
小麦是我国的第二大粮食作物。河北省是我国小麦主产省和重要商品粮基地.小麦品质状况对全国商品小麦品质的影响至关重要。2010年在河北省中部石家庄、衡水、沧州3个地区,抽取27个粮库商品小麦样品进行品质检测分析。结果表明:55.56%的小麦样品的容重达到1级小麦的要求,51.85%小麦样品的籽粒蛋白质含量在14.0%以上,22.22%的小麦样品湿面筋含量在32%以上,96.30%的降落数值在300s以上,48.15%的小麦样品的面团稳定时间在3min以上,55.56%小麦样品的面团拉伸阻力在100—200BU之间。2010年冀中小麦产区粮库小麦样品的千粒重和降落数值显著高于2008年和2009年,2010年的出粉率、面粉色泽a*值、籽粒蛋白含量、拉伸长度、拉伸阻力、最大拉伸阻力和拉伸能量显著低于2008年。
Wheat is the second largest food crop in China, and Hebei Province is a main wheat producing region and an important commodity grain base in China, so the wheat quality status of this region is an essential factor for national market wheat quality status.This research compared the quality with 27 samples of wheat obtained from Shijiazhuang, Hengshui and Cangzhou cities of Hebei Province separately in 2010.The resuIts showed that there was 55.56 percent of wheat samples meet standard of first level for bulk density,and 51.85 percent of samples with the grain protein content more than 14 percent,22.22 percent of samples with wet gluten content meet the standard more than 32 percent,the falling value of 96.30 percent of samples meet more than 300 sec- onds,48.15 percent of which the dough stability time meet more than 3 minutes,55.56 percent of which the dough resistance to extension was between 100 BU and 200 BU.The TKW and the give falling value of the Commodity Wheat Produced in middle of Hebei Province in 2010 are significantly higher than in 2008 and 2009. The flour extraction,flour color a* value,the grain protein content,tensile length,tensile resistance,maximum tensile resistance and tensile energy are significantly lower than in 2008.
