摘要
生物抑菌物质由于具有高效无毒、来源广泛等优点,在食品保藏、防腐、疾病治疗等方面逐渐引起人们重视。本研究综合国内外的研究成果,将生物抑菌物质归纳为植物源抑菌物质、食用菌源抑菌物质和微生物源抑菌物质等种类,以期为生物抑菌剂的进一步开发利用提供依据。
Antibacterial material anti-corrosion, disease treatment gradually aroused people' s attention in the aspect of food preservation and because of its efficient non-toxic, wide source etc. This study synthesized the current biological antibacterial substance of domestic and foreign research results. The antibacterial substances classified as botanical antibacterial substances, edible fungus source of antibacterial substances and microbial inhibitory substance and other types in order to provide basis for further development and utilization of biological antibacterial agent.
