摘要
为了提高国产再造烟叶内在抽吸品质,以造纸法再造烟叶浓缩液为原料,在不同时间和温度下进行美拉德反应,通过气质联用仪(GC-MS)分析检测美拉德反应物中的致香成分。结果表明,再造烟叶烟末、烟梗浓缩液的美拉德反应最佳条件为反应温度90℃-05℃,反应时间1h。另外,就反应顺序及萃取过程中是否添加酶对最终反应效果的影响,得出以下结论:烟梗、烟末浓缩液先以1:1的质量比混合,然后进行美拉德反应效果要好于先单独进行美拉德反应,然后再混合涂布在薄丝上;添加0.1%的木聚糖酶进行处理后效果介于前两者之间。致香成分中含有大量的风味成分,其中含量较大的包括:糠醛、5-甲基糠醛、2-乙酰基-5-甲基呋喃、糠醇这4种醛,醇类化合物。
In order to improve the smoking quality of domestic reconstituted tobacco, the reconstituted tobacco as the raw material with the different time and temperature for Maillard reaction. The aroma components in the reaction products of the Malliard reaction were detected by the GC-MS. The result indicated that the optimum condition of Maillard reaction of reconstituted tobacco powder and stem concentrated solution: the temperature is 90 ℃-95 ℃ and the time is 1 h. In terms of the effect of reconstituted tobacco powder and stem concentrated solution (1 : 1), mixed before Maillard reaction was better than separately Maillard reaction before mixed coating on the reconstituted tobacco; Adding 0.1% xylanase treatment effect was in between. There are numbers of flavor compounds in the aroma components, including four kinds of compounds with aldehyde and alcohol: furaldehyde, 5-methylfumldehyde, 2-ethanoyl-5-methylfuran and furfuryl alcohol.
