摘要
本研究以脱色率和蛋白质回收率为考察指标,通过单因素和正交试验进行研究,得出粉状活性炭对水解产物的脱色具有较好的效果。确定其最佳脱色工艺条件为活性炭用量0.5%,pH 4.0,时间40 min,温度50℃,在此条件下的水解产物通过分光光度计进行检测其脱色率为91.58%,通过甲醛滴定法测得其蛋白质回收率为82.5%,基本达到了脱色的目的,提高了其品质。
With the decolored rate and protein recovery as the investigation index and the single factor and orthogonal experiment as study method, the effect of activated carbon absorbing the decolorization product was studied. The optimal decoloring condition was determined: activated carbon dosage 0.5%, temperature 40 ℃, time 40 min, pH 4.0. Under this condition, the hydrolysis product deodorization rate was 91.58% by the absorption photometer detect and the protein recovery was 82.5% through the formaldehyde titration method, basically reaching deodorization purpose, improved the quality of protein hydrolysate.
