摘要
研究了5S管理在高校餐厅食品安全保障中的应用,通过成立5S工作小组,培训餐厅从业人员。比较了实施5S管理前后餐厅配餐间和就餐环境的变化,餐具检验合格率的变化,以及学生满意度的变化。结果表明:5S管理的实施可以有效提高高校餐厅就餐的安全性,提高学生就餐的满意度。
The application of 5S management on food safety in the universi-ty refecto-ry was studied. A working group of 5S was found and the practitioners of refectory were trained. Through comparing the changes of refectory environment and tableware, the results showed that the tableware qualified rate, the university refectory safety and students dining satisfaction had significantly increased after the application of the 5S management system.
