摘要
采用罗非鱼鱼尾和海藻酸钠为主要原料,对制备模拟鱼翅的技术进行了研究,以鱼尾粉末用量、CaCl2浓度、海藻酸钠浓度、硬化时间为考察因素,硬度和柔韧性为考察指标,采用正交实验法对主要工艺参数进行优化。结果表明,最佳工艺为:CaCl2浓度0.6%、硬化时间90 min、海藻酸钠浓度8%、鱼尾粉末用量11%,此工艺条件下制成的鱼翅与复水后的天然鱼翅的品质非常相似。
The simulated shark fin was simulated from tilapia fishtail and sodium alginate, the simulation technology was investigated in this paper, the effects of tilapia fishtail powder, calcium chloride concentration, sodium alginate concentration and time were studied, using orthogonal test to optimize the main process parameters. Results indicated that the optimal conditions were as follows: calcium chloride 0.6%, 90 minutes, sodium alginate 8%, tilapia fishtail powder 11%. Under those conditions, the stimulated shark fin has the similar quality to the rewatering shark fin.
