摘要
为充分开发利用红枣、山楂与红茶资源,以山楂、红枣和红茶为主要原料研制新型茶饮料。在单因素试验的基础上,通过正交试验确定复合茶饮料的最佳配方为:红枣汁50%,山楂汁35%,红茶液6%,蔗糖10%,柠檬酸0.08%,抗坏血酸0.005%。采用该配方制得的茶饮料透明、稳定,具有红枣、山楂和红茶特有的颜色与香气,是一种营养丰富、色泽美观、口感风味俱佳的新型饮品。
For full development and utilization of red dates and hawthorn,we developed a new tea beverage with red dates,hawthorn and black tea. On the basis of single factor test, through orthogonal tests, the optimum formula of compound tea beverage was as follows: red dates juice 50%, hawthorn juice 35%, black tea 6%, sugar 10%, citric acid 0.08%, VC 0.005%. With the optimized formulation, we could get a new nutritious tea beverage with unique color and flavor of red dates, hawthorn and black tea, and with good taste and flavor.
