笼养和放养条件下优质肉鸡屠宰性能及肉质性状比较分析 被引量:9

摘要 选择四川大恒家禽育种有限公司培育的S07系(经过连续4个世代选育)1日龄公鸡400只,笼养育雏至5周龄末开始笼养和林下放养分组饲养,不同分组采用相同的饲喂方案,10周龄末和22周龄末开展屠宰试验及肉质测定分析,比较两种饲养条件下优质肉鸡的屠宰性能和肉质风味。结果显示:笼养组活体重、屠体重、腹脂率极显著高于放养组(P<0.01),全净膛率和半净膛率显著高于放养组(P<0.05),而屠宰率、腿肌率和胸肌率均无显著性差异;笼养组鸡肉肌内脂肪含量、肌纤维密度极显著高于放养组(P<0.01),肌苷酸含量差异不显著,肌内脂肪含量、肌苷酸含量随饲养日龄增加而增加,但饲养后期肌内脂肪沉积速度高于肌苷酸。 To investigate the difference on carcass performance and meat quality of quality chicken between cage rearing and free-range rearing, 400 male chicks from pure line S07 bred by Sichuan Dahen Poultry Breeding Company were chosen and reared for 5 weeks in cage, divided into cage rearing group and free-range rearing group after 5 weeks age, the two groups were used the same feeding program. The result of slaughter test and meat qualitymeasurement at 10 and 22 weeks age showed that,live weight,carcass weight,percentage of abdominal fat,intramuscular fat (IMF) content and muscle fiber density of cage group were significantly higher than those of free-range group (P〈O.O1), whole net carcass rate and half net carcass rate were higher than those of free-range group (P〈O.05), however, dressing percentage, breast muscle percentage,leg muscle percentage and inosine monophosphate (IMP) content had no significant differences, and IMF and IMP were increasing as days went on, but the deposition rate of IMF was higher than that of IMP in cage group.
