传统十种白酒香型骨架成分的亲缘性分析 被引量:9

摘要 选取十种白酒香型的典型代表作为样品,用气相色谱法对白酒标样进行图谱分析并确定了色谱分析条件。浓香型、兼香型、凤香型和特型四种白酒之间的相似度高达0.9以上,反映出上述四种香型具有较近的亲缘关系;而董香型和芝麻香型之间相似度也超过0.9,二者之间亲缘性较近;米香型和豉香型之间的相似度为0.9,说明二者之间亲缘关系较近。 The samples were selected as a typical representative of the ten types of flavor liquors. Liquor patterns were analysed by gaschromatography. Then the chromatographic conditions were identified. The similarity among the Luzhou liquor, Jian-flavor liquor, Feng-flavor liquor and Te-flavor liquor was higher than 0.9, reflecting the close relationship between them. The similarity between Dong-flavor liquor and Zhima-flavor liquor was over 0.9, which represented their relationship. Mi-flavor liquor and Chi-flavor liquor were 90% similar showing the intimate relationship between them.
