摘要
用甲醇提取黑加仑籽油的极性物质,采用DPPH法、ABTS法、β-胡萝卜素漂白法以及Fe3+还原法测定黑加仑籽油的体外抗氧化能力。结果表明:黑加仑籽油极性物质的DPPH自由基清除率、ABTS自由基清除率均可达到100%,β-胡萝卜素氧化抑制率最高为95%,Fe3+还原产物(普鲁士蓝)的吸光度最大为0.754,4项指标值均高于阳性对照物Trolox以及橄榄油、芝麻油、花生油的最大抗氧化值。黑加仑籽油具有较强的抗氧化活性,并且所含极性抗氧化物质的抗氧化途径不同。
The polar substances were extracted from black currant seed oil by methanol. Antioxidant activities of black currant seed oil in vitro were determined by methods of DPPH, ABTS,β - carotene bleaching and ferricirou reduction. The results showed that the polar substances of black currant seed oil had 100% of the scavenging rates on DPPH and ABTS radicals, the highest inhibition rate of β- carotene oxidation was 95%, and the highest absorbance of the prussian blue in the ferric iron reduction test reached 0. 754. All the four antioxidant properties were better than the positive control group of Trolox, olive oil, sesame oil and peanut oil. Black currant seed oil had high antioxidant activity and the antioxi- dant pathways of the polar antioxidant substances were different.
