摘要
以乳酸乳球菌株(Lactococcus lactis subsp.lactis N3816)为出发菌株,通过单因子试验和正交设计方法对该菌株产Nisin发酵培养基进行优化。结果表明:该菌株产Nisin的最适碳源、复合氮源和生长因子分别为:蔗糖0.8%、蛋白胨2.0%、酵母膏1.0%、Tween80 1.5%。
This paper mainly studied the optimizing of the media used in the production of Nisin by Lactocoeeua lactis subsp, lactis N 3816.The influence of several major components in fermentation medium on the Nisin fer- mentation was studied by single factor and the orthogonal experiments. The results showed that the optimal fer- mentation medium proportions were sucrose 0.8%,tryptone 2.0%,yeast extract 1.0%,Tween80 1.5%.
