食品中呋喃的前处理与检测方法研究

摘要 2004年5月FDA发布在很多经过加热处理的食品中检出了污染物呋喃。由于呋喃具有致癌危险,这一发现引起了国际社会的高度重视,各国科学家分别对热加工食品中呋喃的前处理和检测技术进行研究,从而使食品中呋喃的来源、毒理学、形成路径、提取和测定方法等研究取得了很大的进展。本文综述了目前食品中呋喃的前处理与检测方法研究进展。
