摘要
红曲是我国酿酒史上的一项伟大发明,是华夏文明和科学文化遗产。对红曲的应用和研究进行了概述并针对红曲的传承与科学发展,提出了加强"红曲传统制曲与酿酒技艺"的国家非物质文化遗产申报;组建红曲行业协会,加强行业管理;加强科学研究,重视红曲保健食品的研制与开发;重视红曲食品安全等5个方面的建议。(孙悟)
Red starter is a great invention in Chinese wine-making history. As the treasured cultural heritage, it should be transferred from genera- tion to generation. In this paper, five proposals were put forward as follows: the declaration of traditional red starter-making technology for state non-material cultural heritage, foundation of red starter industrial assoication, strengthening industrial management, more scientific research in the development of red starter healthcare food, and paying more attention to red starter food safety.
