摘要
以硒麦芽粉为原料,研究制备具有补充有机硒和增强免疫力功能的保健食品硒麦芽颗粒。亚硒酸钠浸种小麦,进行无土生物转化成有机硒麦芽,经干燥、粉碎作为原料,L9(34)正交实验选择最佳工艺配方;以混合均匀度指标确定混合时间;以颗粒水分和溶化性指标确定干燥温度和时间;并试验选择颗粒粒度及颗粒辐照灭菌剂量,按照试验确定的工艺参数,进行3批生产验证。最佳工艺配方糊精20%、乳糖28%,乙醇浓度60%;混合时间25 min,硒含量M、RSD符合要求;生产批量干燥的温度65℃,时间4 h^5 h,粒度在10目~50目,辐照剂量6 kGy^8 kGy,3批验证成品检测结果均合格。以硒麦芽粉为原料,按照试验确定的工艺参数,可以制备得到质量稳定的硒麦芽颗粒。
To prepare Selenium malt granules with immunoenhancement properties.The organic Se-rich malt transformed from inorganic Se by soaking with Na2SeO3. as the material raw was made into granules, which can supple organic Se and stimulate immunity system. The recipe was optimized by L9(34) and homogeneity, granules moisture, dissolvability were selected as indexes. Furthermore, optimal particle granularity and radiation sterilization dosage were selected. Finally, three batches samples were produced by the optimal conditions. The best molding craft was that 20 % dextrin, 28 % lactose ; with 60 % ethanol mixed 25 min. Contents of Selenium and RSD meet the requirement. Batch production conditions were determined as follows: drying granules at 65 ℃ for 4 h-5 h ; 10 mesh-50 mesh ; and radiation sterilization under 6 kGy-8 kGy. Three verifying batches production granules were qualified. Selenium malt granules prepared with Se-rich malt powder by the optimal process meets the requirements of granule preparation with stable quality
