虎杖叶浸提物对亚硝酸盐清除和亚硝胺生成阻断的最佳浸提工艺 被引量:2

摘要 目的:研究虎杖叶浸提物清除亚硝酸钠及阻断亚硝胺生成的最佳浸提条件,为虎杖叶开发为防癌保健茶提供理论依据。方法:在模拟人体胃液(pH为3.0,温度为37℃)条件下,采用盐酸萘乙二胺和α-奈胺法,探究虎杖叶浸提液对亚硝酸盐的清除及亚硝胺合成阻断的能力。结果:虎杖叶在100℃、浸泡15 min、料液比1∶50条件下的浸提液对亚硝酸钠的清除效果最好,最大清除率可达86.12%。虎杖叶在100℃、浸泡5 min、料液比1∶50条件下的浸提液对亚硝胺合成阻断最好,最大阻断率可达90.02%。结论:虎杖叶浸提物具有较强清除亚硝酸盐及阻断亚硝胺合成的能力且受浸提工艺的影响。 Objective : To study the best condition of extracts from Polygonum cuspidatum leaves for scavenging the sodium nitrite and disconnecting the nitrosamine, and provide the theoretical basis for developing health tea of protective effect on cancer risk with Polygonum cuspidatum leaves. Methods:Under a simulated human gastric juice condition ( pH = 3.0 and temperature at 37 ℃ ) , the abilities of scavenging the sodium nitrite and discon- necting the nitrosamine were studied by the extracts from Polygonum cuspidatum leaves using the methods of N - ethylenedlamine dihydrochloride and α - naphthylamine. Results : The best effects of scavenging the sodium ni- trite and disconnecting the nitrosamine synthesis of the extracts from Polygonum cuspidatum leaves were that the clearance rate and blocking rate reached 86.12% and 90.02% under the water extraction condition with the time at 15 min, the temperature at 100℃, the ratio of material to liquid at 1:50 and the time at 5rain, the tempera- ture at 100℃, the ratio of material to liquid at 1 : 50, respectively. Conclusion : The extracts from polygonum cus- pidatum leaves possess stronger abilities of scavenging the sodium nitrite and disconnecting the nitrosamine syn- thesis and they are affected by extraction process.
