摘要 大豆是优质的植物蛋白资源,但同时也是八大食物过敏原之一。大豆蛋白中Gly m Bd 28K,Gly m Bd 30K(P34)和β-伴大豆球蛋白的α亚基Gly m Bd 60K被普遍认为是大豆中的主要致敏原。本文综述了大豆蛋白主要过敏原的结构、功能及其过敏原表位的研究进展。 Soybean is considered to be high-quality plant allergens.Gly m Bd 28K,Gly m Bd 3OK(P34) and c^-subunit of soybean proteins.In this paper,the structure, function and summarized. protein resources and one of the eight major food n 13-conglycinin Gly m Bd 60k are the major allergens allergenic epitopes of soybean protein allergens were
